Mini Blueberry Muffins

Bite sized goodness, is how I describe these muffins.

A yummy breakfast snack or perfectly sized picnic treat.

Who can turn away a mini sized muffin anyway?! Horrible people, that’s who.

And you’re not a horrible person, you are wonderful. Have a mini muffin, it’s on me!

2 cups flour                                         2 eggs

1/4 cup sugar + more for sprinkling          3/4 cup milk

3 tsp. baking powder                             1/4 cup melted butter

1/2 teaspoon salt                                  1 cup blueberries

Preheat oven to 400 degrees      

Butter two mini muffin pans or one regular pan

  1. Sift together dry ingredients in a large bowl. Toss the blueberries in the flour mixture.
  2.  In another bowl whisk the eggs, milk, and melted butter. Make a well in the dry ingredients and pour in the egg mixture. Mix together until just blended. 
  3. Scoop a spoonfull of batter into each buttered cup, sprinkle with sugar.
  4. Bake for 10-15 minutes, until slightly golden and springs back to the touch.
